Spinach Omelette

Spinach Omelette


  • 4 eggs, beaten

  • 1 tsp salt optional

  • OR

  • 1 tsp seasoning substitue

  • 1 tbsp oil OR margarine OR butter

  • pinch nutmeg

  • dash of fresh pepper

  • 10oz or more of raw spinach

  • 1/2 onion, chopped


  1. heat fry pan on medium heat

  2. fry onion in margarin for 3-5 mins until soft

  3. add spinch and stir-fry for 1-2 mins until shrivelled

  4. add remaining ingredients

  5. cover, turn off heat, leave 2 mins or until eggs set to your liking

  6. optional: chopped ham or chicken

  7. shredded cheese

  8. chopped tomatoes

Hi Sunshine, I am new as of right now and HAPPY BELATED 50TH BIRTHDAY! I would love your spinach omelet reciepe also. Frankly, your omelets collection. I too am retired due to health and live one day as it is given. I miss my work family, but it is what it is and life does go on in new directions. All in all one can be sure that God takes care of His own.

Spinach is one of my veggie omelets I have every week - no nutmeg and I try different cheeses with mushrooms -

You can make this with Egg Beaters, most definately! I have also used swiss chard instead of spinach. I steam a huge batch of chard then freeze it in portions for use later.

I am sure you can also make this with egg whites. I usually use Egg Beaters.
