Skinny Pumpkin Spice Mug Cake

For those nights when you're feeling health-conscious, but just need a sweet, little "something."


  • 4 tbsps whole wheat white flour

  • 1/2 tsp baking powder

  • 1 tbsp brown sugar

  • 1/4 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1 pinch nutmeg

  • 1 tsp pumpkin purée

  • 2 tbsps almond milk (or milk of your choice)

  • 11/2 tsps applesauce (unsweetened)

  • 1/4 tsp vanilla extract


  1. In a small bowl, whisk together dry ingredients until completely combined then add in pumpkin puree, milk, apple sauce and vanilla extract. Whisk together until all clumps are gone.

  2. Spoon mixture into a microwavable safe coffee mug and microwave on high for 1 minute and 15 seconds.

  3. Allow cake to cool a bit then enjoy!

Ally2k, this recipe is dairy free if you use almond or soy milk.
